Cucumber soup

As I may have mentioned about a 100 times so far, I love soup.

What I may not have mentioned yet is that last year 2025 I was fortunate enough to become pregnant with twin boys. Now that all has gone well and our twin boys are about to turn a year old, I would love to share all my craving recipes and everything I enjoyed making and eating during those wonderful months.

I will start by saying I had a very very nice pregnancy and enjoyed food to the fullest, the one thing that changed was that my belly was so full of babies that there was not a lot of space left for food, so I enjoyed simple recipes that were light on the stomach.

So when being 6 months pregnant with twins and you see a recipe for cucumber soup pass by you know you have to make it!

This is exactly what happened and boy am I happy I only found this recipe at 6 months pregnant, otherwise my babies would have been solely fed on cucumber soup!

With cucumbers coming back into season I knew I had to recreate this! I know I mostly write about family recipes but I feel like this one has become a new family recipe as it marks the start of our new family.

And after making it about 20 times and giving my own spin to it, I will share my twists on this beautiful cucumber soup recipe that is comforting, warm, yet refreshing and just a really fun recipe to make!

Ingredients

2 cucumbers
1 onion
1 clove of garlic
100 ml heavy cream
100 ml Feta
odyssey sea salt mix

Instructions

1. Start by chopping your onion and your garlic, add a little olive oil to your pan and sautee the finely chopped onion and garlic.
2. Take out the seeds of your two cucumbers and set aside, finely chop 1 cucumber and cut the other in nice even pieces.
3. Add the cucumber seeds and bigger pieces of cucumber to your sauteed onion and garlic, and heat the cucumber and the salt mix to taste.
4. When all the aromas are good and coming through add your heavy cream and let that cook for 5-6 min.
5. Strain your soup, add all that remains to a blender and reintroduce that to your strained soup!
